Bean Soup

This is a very tasty, simple to make, bean soup.

:  Great with pork tenderloin, or toasted cheese sandwiches!  :



Directions

:  Cut the stalk of celery into four pieces lengthise, and then cut each of the four pieces crosswise in slices about 1/8" thick to yield a small dice.

:  In a medium sized sauce pan, sweat the celery and the onion in olive oil until soft. Add the salt and pepper.

:  Add both cans of beans, including the juice, and mix with the celery and onion.

:  Remove one cup of the beans and puree until smooth in a food processor.

:  Return the pureed mixture to the sauce pan, and then add the ham and the chicken stock.

:  Bring to boil, and then simmer for 20 minutes. Adjust salt as needed based on taste.

This is a good recipe for young teens to make on their own!

Notes...

Be sure to puree some of the bean mixture. That is key to bringing out the flavor of the beans in this soup.
