Italian Meatballs

The secret ingredient is the ciabatta soaked in milk! The meatball mixture works great for big or small meatballs or you can use it to make a meatloaf.

Directions

:  Sweat the onion and garlic in olive oil over low heat until soft. Add the parsley, salt and pepper.

:  Tear up a loaf of ciabatta bread into small chunks and soak in enough milk to completely soak the bread. Drain off any excess milk.

:  Combine the sweated vegetables, the soaked bread, and the meat, egg and salt & pepper in a large bowl. Don't overmix.

:  Form baseball sized meatballs and brown in a skillet on medium heat.

:  Add to spaghetti sauce (or gravy) and simmer for at least 30 minutes, or place the meatballs in a casserole dish, cover with sauce and bake 20-30 minutes at 400F.

Kids can make this recipe on their own. In face, this recipe provides a good opportunity to teach proper food hygiene in the kitchen, emphasizing the prevention of cross contamination while handling raw meat and eggs.
