Wilted Spinach

This is a fast and tasty way to wilt spinach for a side dish or to form a bed for fish, shrimp, or meat.

Directions

:  In a medium size pan, saute:

2 tablespoons olive oil
1 clove garlic, minced
pinch of salt
pinch of ground black pepper

:  Add two large handfuls of spinach to the frying pan (about 3oz or half of a ?salad bag?) and reduce heat to medium low. Toss the spinach frequently until it is completely wilted, without letting it start to cook. Add a splash or two of chicken stock if pan gets dry and begins to scorch the spinach.

:  Serve immediately.

Chop the garlic and rinse the spinach leaves.

Notes...

This dish is way easy and way good! I always find it amazing to watch how fast spinach wilts to a fraction of its pre-cooked volume. Watching this transformation is reason enough to make wilted spinach at least once in your lifetime! The main trick with spinach is not to overcook. Let it wilt, and get it out of the pan and onto your plate.
