This is a fast and tasty way to wilt spinach for a side dish or to form a bed for fish, shrimp, or meat.
Serve as a side dish or as a bed for fish, shrimp, or meat. 
In a medium size pan, saute:
Add two large handfuls of spinach to the frying pan (about 3oz or half of a ?salad bag?) and reduce heat to medium low. Toss the spinach frequently until it is completely wilted, without letting it start to cook. Add a splash or two of chicken stock if pan gets dry and begins to scorch the spinach.
