Fresh Mexican Salsa

This is a great salsa that doesn't require any cooking and if you have really fresh, nice tomatoes it will taste absolutely terrific!

:  Serve with chips, tacos, carnitas, etc.  :



Directions

:  Cut the tomatoes in half, remove the seeds and then cut in a a medium dice.

:  Combine the tomatoes and other ingredients in a glass bowl:

1/4 cup onion, minced
2 tablespoons fresh cilantro leaves, chopped
2 teaspoons garlic powder
1 teaspoon Lawry's seasoned salt
1 teaspoon ground black pepper
1 tablespoon olive oil
1 tablespoon lemon juice
1/2 serrano chili, finely minced
1-2 scallions, thinly sliced crosswise

:  The ?spicy temperature? of this salsa is almost entirely dependent on the amount of chili used in the salsa. Add more or less to get the ?Fire? that you want, or adjust with a few drops of chipotle tobasco sauce.

:  Mix well and adjust salt, pepper and spiciness to taste.

Chopping the onions and mixing. It's hard to cut these tomatoes without mashing them unless you have a very sharp knife, so I don't let the kids do that part. But, an older, patient child with a serrated knife can pull it off nicely.

Notes...

This is a simple recipe and if the tomatoes are fresh, always yields outstanding results. Add small amounts (say a quarter teaspoon) of finely minced chili at a time and taste-test before adding more. It can cross over from mildly spice to downright hot pretty quickly. Fresh cilantro leaves and the scallions make this salsa!
