Banana Cake

Way Simple and Way Good. Can even be made on Saturday morning before the kids are up when you see those last few remaining bananas turning brown on the counter!

:  Substitute pecans for the walnuts, or eliminate the nuts altogether  :



Directions

:  In a large mixing bowl, combine:

1 3/4 cups flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
2/3 cup sugar

:  Add to the bowl:

1/3 cup butter, softened
2 eggs
1 cup soft bananas, mashed (about 2 bananas)
1 cup chopped walnuts

:  Beat with mixer until well combined and pour into a greased and floured 8x4? loaf pan or an 8" cake pan. Bake at 350F for 1 hour or until toothpick in center comes out clean.

:  To make the frosting [optional], combine in a bowl and beat until smooth:

4 ounces Philadelphia cream cheese
2 tablespoons butter, softened
2 cups powdered sugar

:  Spread frosting on fully cooled cake.



Kids!

Do this yourself and surprise the kids! Or, let them do the whole thing themselves with just a bit of 'mixer supervision'.

Super easy, uh-huh, uh-huh! That's what you'll be singing as you bang out this terrific banana cake recipe. I make it in the shape of a bread loaf and don't bother with the frosting since that's how everyone in our house seems to like to eat it. But, it makes a fine frosted cake as well.
