Mandarin and Black Eyed Peas Salad

This is an internet find that turned out quite nice (thank you, Rose!). The original recipe called for black beans, but we found that black eyed peas were a nice alternative. And, it's really easy!

:  A nice summer salad with fish or meat.  :



Directions

:  Prepare the vegetables and the mint:

1 cup jicama, diced in 1/2" squares
2 tablespoon red onion, minced
2 tablespoon jalapeno, seeded and minced
2 tablespoon fresh mint, shredded

:  Combine the remaining ingredients about 30 minutes before serving



Kids!

Give 'em the recipe and set them loose.

Notes...

This salad can be prepared a day in advance. Just don't add the mint and oranges until you're ready to serve.
